Graced by views of the pool and appaluded for its somewhat secluded setting, Tableau enjoys a south-of-France impulse that shines through in dishes like roasted chicken with truffled salsify and chanterelles. Similarly delicious are pancetta-wrapped monkfish and roasted rack of lamb with chestnut flan. Fabulous tasting menus are a popular option, and there's even a vegetarian version. Early on, breakfast and lunch were available only to hotel guests; that's no longer a restriction.
